Mediterranean Feta Dip

This dip makes for a wonderful addition to any event you’re planning. I recently served it at dinner party I cooked for, and everyone demanded to have the recipe! The lemon zest brings all the flavors together and makes the dip extra light and zingy. Make sure to use the thick Greek yogurt variety versus the watery ones, as this will ensure the dip turns out thick and creamy. Enjoy with pita chips or crudités.

Mediterranean Feta Dip

TOTAL TIME: 10 minutes
SERVES: 8 people

Ingredients

  • 1 Block feta
  • 180 g Greek yogurt
  • Zest of 1 lemon
  • 2 tbsp olive oil + more for serving
  • ½ tsp chili flakes
  • ½ tsp dried mint
  • 2 tbsp toasted pine nuts

 

 

Instructions

  1. In a blender or food processor, combine the feta, Greek yogurt, lemon zest and olive oil. Blend until well combined and all lumps are gone.
  2. Transfer into a serving bowl and top with olive oil, chili flakes, dried mint and toasted pine nuts.

This was so good! I skipped the chili flakes (and left out the tomatoes coz we DIDN’T have any) and my kids said it was the best dinner ever! We had no leftovers. it was so easy to make too!
